There is no exact science or measurement when it comes to flipping over dried foods. You need to judge these by sight. If you think that one side is dry enough, then flip them over. If not, let them stay under the sun for a while longer.

Avoid the temptation of touching them often. The oils and moisture from your hands can only lengthen the drying period and destroy the appearance of food items. Also, this encourages microbial transfer which is not good at all.

On very hot days, place the food items in the shade to prevent excessive color loss. If an unexpected shower turns up or if the weather turns, you need to complete the drying process using another method. Do not store the food items away in favor of the next sunny day. If you do so, the food will only spoil which can contaminate the entire batch.
